I don't say this lightly: the migas taco from Veracruz All Natural is the best breakfast taco in Austin. There, I said it. Come at me.
I first stumbled onto Veracruz back in 2019 when a coworker swore up and down that I hadn't really lived in Austin until I'd tried their tacos. I rolled my eyes—I'd had plenty of breakfast tacos, thank you very much—but I drove over to the trailer on East Cesar Chavez one Saturday morning anyway.
That first bite humbled me real quick.
The Migas Taco
Let's talk about this taco. It's a simple concept: scrambled eggs with crispy tortilla strips, cheese, and their signature salsa verde. But something about the way Veracruz does it transcends the sum of its parts.
The eggs are fluffy but not overcooked. The tortilla strips stay crispy even as they mingle with the eggs. The cheese is melty and gooey in all the right ways. And that salsa verde? It's bright, tangy, with just enough heat to wake you up without setting your mouth on fire.
All of this comes wrapped in a fresh flour tortilla that's soft and slightly chewy. None of that stiff, cold tortilla nonsense you get at lesser taco joints.
Beyond the Migas
While the migas is my go-to, everything I've tried at Veracruz has been solid. The barbacoa is tender and well-seasoned. The potato and egg is comfort food perfection. And their refried beans? Don't sleep on them.
They've also got some killer agua frescas. The horchata is creamy and not too sweet—exactly how it should be.
The Vibe
Veracruz now has several locations around Austin, but I still have a soft spot for the original trailer. There's something about ordering from a window, finding a spot at one of the picnic tables, and watching the East Austin morning unfold while you eat one of the city's best tacos.
It's not fancy. The tables are weathered, you might have to wait a bit if there's a rush, and parking can be tricky. But that's part of the charm.
The Verdict
If you live in Austin and you haven't been to Veracruz, what are you even doing? Go get a migas taco. Throw some avocado on there if you're feeling fancy. Grab an horchata. Sit outside if the weather's nice.
